  • 1 tablespoon Olive oil
  • 2 cloves Garlic, minced Sizzle until fragrant
  • 1 medium Onion, diced
  • 2 stalks Celery, diced
  • 1 large Carrot, diced
  • 4 cups Chicken stock Use low sodium if preferred
  • 1 cup Orzo pasta Can substitute with small pasta or rice
  • 2 cups Shredded rotisserie chicken To save time
  • Juice of 1 lemon Fresh lemon juice only for the best flavor
  • 1 handful Fresh dill, chopped adds freshness
  • 1 handful Fresh parsley, chopped adds freshness

Instructions
 

Preparation

  • In a large pot, heat olive oil over medium heat.
  • Sauté garlic, onion, celery, and carrot until softened.
  • Pour in chicken stock and bring to a boil.
  • Add orzo pasta and cook according to package instructions.
  • Stir in shredded chicken and lemon juice.
  • Season with salt, pepper, dill, and parsley before serving.

Notes

For added flavor, let the soup sit for a while after cooking. The flavors meld together nicely. Always taste before serving to adjust seasoning.
