  • 2 tbsp olive oil or avocado oil
  • 1 lb boneless skinless chicken thighs (or breasts), cut into bite-sized pieces
  • 1 medium onion finely chopped
  • 3 cloves garlic minced
  • 2 medium celery stalks diced
  • 2 medium carrots sliced (optional, for a slightly higher carb count)
  • 4 cups chicken broth low-sodium preferred
  • 1 cup heavy cream or unsweetened almond milk
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese optional, for extra creaminess
  • For the Keto Dumplings:
  • 1 cup almond flour
  • 2 tbsp coconut flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • ¼ tsp garlic powder
  • 2 tbsp melted butter or ghee
  • 1 large egg
  • 2-3 tbsp unsweetened almond milk as needed for dough consistency

  • Prepare the Chicken Stew:

Prepare the Chicken Stew

  • Heat olive oil in a large pot or Dutch oven over medium heat. Add the chicken pieces and cook until browned on all sides, about 5-7 minutes. Remove and set aside.
  • In the same pot, sauté the onion, garlic, celery, and carrots (if using) until softened, about 5 minutes.
  • Pour in the chicken broth and bring to a gentle simmer. Add the cooked chicken back to the pot, along with thyme, rosemary, salt, and pepper. Let it simmer for 10 minutes.
  • Stir in the heavy cream (or almond milk) and shredded cheddar cheese (if using). Reduce heat to low and let the stew thicken slightly while you prepare the dumplings.

Make the Keto Dumplings

  • In a mixing bowl, combine almond flour, coconut flour, baking powder, salt, and garlic powder.
  • Add the melted butter and egg, mixing until a dough forms. If the dough is too dry, add almond milk, one tablespoon at a time, until it reaches a soft, pliable consistency.
  • Scoop tablespoon-sized portions of the dough and drop them gently into the simmering stew.
  • Cook the Dumplings:
  • Cover the pot with a lid and let the dumplings cook for 10-12 minutes, or until they are firm and cooked through. Avoid stirring to prevent the dumplings from breaking apart.
  • Serve and Enjoy:
  • Ladle the keto chicken and dumplings into bowls and garnish with fresh parsley or a sprinkle of black pepper. Serve warm and enjoy this low-carb comfort food masterpiece!
