Ingredients

  • 1 tablespoon butter - salted or unsalted
  • 4 eggs - I use large eggs
  • ¼ teaspoon salt - more or less to your liking
  • pinch fresh ground pepper - more or less to your liking
  • ¼ cup cheese - freshly grated. Cheddar Colby Jack, pepper jack, goat cheese, feta (really any kind of cheese will work here)

Instructions

STEP 1:

  • In a medium bowl, crack the eggs and add a pinch of salt and pepper. Whisk vigorously until the mixture is smooth and fully combined.

STEP 2:

  • Place a nonstick skillet over medium-low heat and add the butter. Allow it to melt completely, ensuring the pan is evenly coated. Pour in the egg mixture and immediately begin stirring gently with a silicone spatula.

STEP 3:

  • Keep stirring the eggs slowly and consistently to create soft, fluffy folds. Cook for about 2 minutes, or until the eggs begin to set but are still slightly runny.

STEP 4:

  • Sprinkle your choice of cheese evenly over the eggs. Continue stirring gently for another minute, allowing the cheese to melt and blend into the eggs. Remove the skillet from the heat—the residual warmth will finish cooking the eggs to perfection.

STEP 5:

  • Serve the cheesy scrambled eggs warm, garnished with an extra sprinkle of salt and pepper if desired. Enjoy this creamy, comforting breakfast dish!
